Native starch is starch derived from potato, tapioca, maize and other produce. It is mainly use as a thickening agent in foods such as sauces and soups as well as meat, fish and vegetarian dishes.
Modified starch, also called starch derivative, is prepared by physically, enzymatically, or chemically treating native starch, thereby changing the properties of the starch. Modified starches are used as thickening and/or stabilizing agents in various foods, especially in the sauce industry.
Starches can be modified to enhance their performance for different applications. Starches may be modified to increase their stability against excessive heat, acid, shear, time, cooling, or freezing; to change their texture, to decrease or increase their viscosity, to lengthen or shorten gelatinization time or to increase their visco-stability.
